    Homemade veggie seasoning

    The flavor enhancer available has too much salt so I thought why not try to make my own homemade veggie seasoning. Ingredients for Homemade veggie seasoning carrot zucchini green beans green peppers hungarian peppers or red peppers tomato peel (when peeling tomatoes don’t throw the peel,dry it instead) parsley,lovage How to prepare Homemade veggie seasoning recipe Using a vegetable peeler,slice the zucchini and carrots and slice very thin the rest of the veggies. Put everything in an old metal baking tray and let dry in the sun. If overnight it’s too cold,bring indoors. Dry for a few days or until completely dry and use a food processor to ground.

    Cauliflower Popcorn

    Anything is good if it makes our kids eat their veggies. Was surprised to see that mine enjoyed the cauliflower even raw,as for this version…I can’t just say the little leftovers were great! Ingredients for Cauliflower Popcorn half head cauliflower 1 T onion powder 1 t garlic powder 1 t smoked paprika a little oil salt and freshly grounded black pepper How to make Cauliflower Popcorn Clean the cauliflower and cut into popcorn size pieces. Mix with the rest of the ingredients and place in a baking tray. Bake until cauliflower starts to brown,shaking the tray from time to time. Serve right away.

    Korean eggplant salad

    Korean Eggplant Salad Made up a little fusion between the Romanian and the Korean kitchen. How cool is that? And not weird at all. I saw so many combination for the roasted eggplant,but not this version yet. Be brave and try it out,it’s great! Ingredients: one roasted eggplant one T gochugaru one t gochujang 1/4 t sesame oil korean salt,to taste Chop the eggplant in a chopper until creamy and mix with all the ingredients. The quantity can be different,make it according to your taste. I served it as an appetizer.

    Hungarian Chili Paste Eros Pista is a chili paste we use quite often around here and searching for the recipe I was quite surprised by its simplicity.I was used that I had to boil the sauce,but this version is much easier. Work with gloves,stay away from the eyes and work near an open window.     Vertical pear and walnut salad with marinated feta

    One of the best salads I’ve tried, it’s a great combination of pear and balsamic vinegar, plus the addition of feta and walnuts puts this salad at the top of the salads. It’s a trendy recipe, great as appetizer as well. Ingredients for Vertical pear salad with marinated feta and walnuts 1 pear 4 crushed walnuts 1 slice feta,cubed 1 T extra virgin olive oil 1/2 t balsamic vinegar fresh oregano leaves How to make Vertical pear recipe Combine the feta,olive oil,vinegar and chopped oregano.     Pineapple upside-down cake

    Pineapple Upside-down Cake From The Hawthorn Series „Muffins, Scones and Teacakes” Ingredients: Base: 60 gr butter 50 gr sugar 6 pineapple slices For the cake: 125 gr butter 1/2 cup sugar 2 eggs vanilla essence 1 1/2 cup self raising flour 1/2 cup milk For the base,cream butter and sugar and spread over a base of 20 cm. Arrange pineapple slices. For the cake,preheat the oven to moderate. Cream butter and sugar until light and creamy. Add eggs one at a time,beating well. Fold the flour into mixture,alternately with milk,beginning and ending with flour. Spread cake over base and bake for about 40 minutes. Allow to cool and serve.

    Tarragon vinegar

    Today I’ve got two recipes in one.  I’ve recently discovered how good is tarragon in potato soups,I had to put some away for the winter. For the tarragon in vinegar, just put the washed and dried tarragon in jars, pressing it down and fill the jars with vinegar. For the vinegar, just add some tarragon to the vinegar and put the bottle in the pantry for at least two weeks.

    Sun-dried tomatoes If sun shines up your alley take advantage of it. I have rays of sun the whole day long in my balcony,so it’s only normal that I make this myself . You need a few tomatoes,use the small and longer ones and quarter them. Place them on a metallic tray and leave in the sun to dry. They’re ready in about 3-4 days. Turn every now and then and remove when they’re gummy,not completely dry. Store in olive or vegetable oil or freeze and use in antipasto, pasta dishes, salads, pizza.

    Matcha Tapioca Pudding I first sampled tapioca in Bangkok, love at first sight…don’t ask why I made a Japanese version:) Ingredients: 3 cups milk 1/2 cup tapioca pearls 1/2 cup sugar 1-2 teaspoon matcha Add the milk,tapioca pearls and sugar to a saucepan and boil on low heat.     Carrot jam with rose water and cardamon

    Ingredients carrot jam 1 kg carrots 1 kg sugar 2 cups boiling water 1/4 cup rosewater 4-5 cracked cardamon freshly squeezed juice from half lime or lemon How to prepare carrot jam Peel the carrots and chop in a food processor or grate. Place in a saucepan with 2 cups of boiling water, cardamon and the sugar. Boil for 30 minutes, stirring often. Add lime juice and rosewater and boil for another 2-3 minutes. Pour the jam in stelirized jars and water bath for 15 minutes.

    Apricot Cake

     Probably you already knew how good are apricot in cakes…well,I didn’t, but I do know. The sourness of the fruit matches the sweet from the cake. Ingredients: 4 eggs 3/4 cup sugar 2 cups flour 7 gr baking powder 1/2 pack unsalted butter at room temperature 1/3 cup milk 7-8 apricots,cleaned and halved In a bowl,mix egg with sugar and add gradually butter and milk. In another bowl,mix flour,baking powder and a pinch of salt. Add to the other mixture until just incorporated. Pour the mixture in a 22×28 cm and arrange the apricots halves. Bake in the oven for about half an hour.

    Coffee cake with raspberries

    Use frozen or freshly picked raspberry for this low sugar coffee cake. Ingredients: 1 cup flour 1/3 cup sugar 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt 1 egg 1/2 cup yogurt 2 tablespoons margarine, melted 1 teaspoon vanilla extract 1 cup  raspberry (fresh or frozen, if using frozen do not thaw) How to prepare In a bowl, combine the flour sugar, baking powder, baking soda, and salt.
