Olivier Salad

I came accross this salad in Iran, but it’s very similar to the Romanian salad boeuf and I think both have their origins in the Russian Olivier salad. Sounds complicated? It’s not, think of the American potato salad and add a few more ingredients.

Ingredients for Olivier Salad

10 medium potatoes
2 carrrots
1 chicken breast
3 hard boiled eggs
dill pickles (add as many as you like,according to your taste)
200 gr green peas (I used frozen)
200 ml mayonnaise
1 T Dijon mustard
freshly squeezed juice from half lemon or lime
salt,freshly grounded black pepper
black olives and tomatoes,to decorate

How to make Olivier Salad

Boil the potatoes,when boiled peel and cube.
Boil the carrot with the chicken breast,when done cube the carrot and shred the chicken. Boil the eggs if not boiled already. Cube the dill pickles as well.
In a bowl,mix the mayo,mustard and lemon or lime juice.
Mix lightly all the ingredients and decorate the salad with olives and tomato slices.

  1. o reteta de nelipsit de pe masa de Craciun, la noi maestra la salata e mama soacra, tot ea, dar si bunica(veteranele … bunica are 82 de ani!) pregatesc si cozonacul!

  2. Maruntelele ziceau „de ce nu e azi maine”:)))toate-s gata,numai sa fac curatenie dupa ele,neaparat era de lasat pe ultima zi. de abia astept sa mergem la colindat. Craciun fericit si voua,draga Anto.
