Relish cu dovlecei pentru hotdog

Precis ati vazut prin filme (mai ales cele din New York) cum isi cumpara pe strada lumea hotdog si poate ati prins si cand intreaba vanzatorul despre relish,care e un fel de sos mai acrut care se serveste peste hotdog.Acuma cand ma gandesc,imi aduc aminte ce bun e cu varza murata taiata felii si niste mustar!Yummm…Bineinteles ca sunt multe retete,dar mie mi-a placut cea facuta de prietena mea din State,Rita.
Ingrediente:
8 cani de dovlecei
4 cepe
3 ardei
3 ardei iuti
8 catei de usturoi
1/2 cana sare grunjoasa
Solutia de otet:
3 cani otet
1/2 cana zahar
1 lingurita turmeric sau curcuma
1 lingurita seminte de mustar
1 lingurita seminte de coriandru sau telina
1 lingurita ghimbir ras
Se dau prin robot toate legumele si se pun intr-un bol mare,se presara sarea si se acopera cu apa.
Se lasa sa stea asa peste noapte.
A doua zi se scurg de apa,se adauga intr-o oala emailata si se toarna solutia de otet peste.
Se da la foc si dupa ce incepe sa fiarba se mai lasa cam 10 minute,amestecand des.
Se umplu borcanele cu relish,se inchide capacul si se pun intr-o oala mare cu apa,dar sa nu fie acoperite de apa.
Se lasa sa fiarba cam zece minute.
I’ve tried Rita’s ( from recipezzar) recipe because I really liked the colour of her relish. I’ve adapted it a little.
Ingredients:
Brine Soak
8 cups shredded zucchini
4 onions, shredded
4 bell peppers, shredded
3 green chili peppers,
8 cloves garlic, minced
1/2 cup canning salt
Vinegar Solution
3 cups vinegar
1 1/2 cups sugar
1 teaspoon turmeric
1 teaspoon mustard seeds
1 teaspoon coriander seeds or 1 teaspoon celery seed
1 teaspoon grated ginger
Brine Soak
8 cups shredded zucchini
4 onions, shredded
4 bell peppers, shredded
3 green chili peppers,
8 cloves garlic, minced
1/2 cup canning salt
Vinegar Solution
3 cups vinegar
1 1/2 cups sugar
1 teaspoon turmeric
1 teaspoon mustard seeds
1 teaspoon coriander seeds or 1 teaspoon celery seed
1 teaspoon grated ginger
Shred all the veggies in a food processor, sprinkle with salt and cover with water. Leave overnight.
The next day,rinse and drain. Squeeze out all the extra water.
Put the vinegar solution in a pan,and bring to a boil. Add the veggies and simmer for 10 minutes.
Fill jars, leaving a little space and process for 10 minutes.
