Royal Icing

I should have tried this a long time ago…I guess the „royal” scared me,since I always thought it’s a fancy and not so easy recipe. Boy,was I wrong! I needed an icing recipe,when I saw Mihaela’s photo on fb. Now I’m so glad I finally tried it,I’ll be using it a lot ,especially for decorating cookies.

Ingredients for Royal Icing

2 egg whites – I used medium eggs
3 cup icing sugar – I might have added a couple of spoons on top of it
2 t lemon or lime juice,freshly squeezed – I had lime

How to make Royal Icing recipe

Make sure the egg whites and the lime/lemon juice are at room temperature. Use a clean bowl for beating,any trace of oil will ruin the icing.
Beat the egg whites with the lime juice until foamy. Start adding little by little the icing sugar and beat to the desired consistency. Add more icing sugar if needed . Don’t refrigerate,it will turn runny.
Use to decorate cookies,gingerbread and I think it can be used for cakes as well.
