„Cooking with a commonsense guide” is my Bible when it comes to cooking books. It has all my favorites and all the classics. It’s been awhile since I saw the recipe in the book and for some reason I didn’t try it,somehow I thought it might be weird. Than I saw the recipe again on a Romanian cooking site and I gave it a try! I’m so glad I did,the combination of scallions and freshly squeezed lemon juice is great!

I used the rice that comes in plastic bags and is immersed in boiling water.

Ingredients Rice Salad

2 bags x 125 gr of rice
2-4 scallions,cleaned and chopped
1 big carrot,cleaned and grated
100 gr green olives with red pepper,sliced
100 gr frozen corn
1 lemon
1 T oil

How to make Rice Salad recipe

Cook the rice according to the instructions.
Add all ingredients in a bowl and add freshly squeezed lemon juice according to your taste.
Add the oil and toss.
Serve cold.
