Probably you already knew how good are apricot in cakes…well,I didn’t, but I do know. The sourness of the fruit matches the sweet from the cake.
3/4 cup sugar
2 cups flour
7 gr baking powder
1/2 pack unsalted butter at room temperature
1/3 cup milk
7-8 apricots,cleaned and halved
In a bowl,mix egg with sugar and add gradually butter and milk.
In another bowl,mix flour,baking powder and a pinch of salt.
Add to the other mixture until just incorporated.
Pour the mixture in a 22×28 cm and arrange the apricots halves.
Bake in the oven for about half an hour.
