Carrot jam with rose water and cardamon
Ingredients carrot jam
1 kg carrots
1 kg sugar
2 cups boiling water
1/4 cup rosewater
4-5 cracked cardamon
freshly squeezed juice from half lime or lemon
How to prepare carrot jam
Peel the carrots and chop in a food processor or grate.
Place in a saucepan with 2 cups of boiling water, cardamon and the sugar.
Boil for 30 minutes, stirring often.
Add lime juice and rosewater and boil for another 2-3 minutes.
Pour the jam in stelirized jars and water bath for 15 minutes.
