Dorayaki

Dorayaki

When I got Azuki bean paste, the first thing I wanted to make was Dorayaki. After I checked for recipes I stopped at this One . The step-by-step guide was very helpful. Dorayaki are the Japanese pancakes, usually filled with azuki bean paste, but I’ve seen other versions with jam and pudding.

Ingredients:
4 eggs
100 gr sugar
2 T honey
160 gr flour
1 t baking powder
1-2 T water
azuki bean paste or jam for filling

Mix the eggs, sugar and honey in a bowl, until fluffy.
Add the flour and baking powder ,mix well and refrigerate for 15 minutes.
Add 1/2 T water at a time to obtain a mixture thicker than pancake batter.
Coat a non stick pan with oil, using paper towels and add the batter. When starts to bubble turn.
Fill with azuki paste and stuck two pancakes together to form a sandwich.

  1. I love this crispy texture outside. Your fish shape is amazing work. I had Oshiruko (red bean soup with mochi) today too, but I can eat red bean dessert everyday… 🙂 Thank you for trying the recipe and the kind mention. 🙂

    1. I’m pretty sure I mixed it longer than I should, supposed to be smoother but I’m sure I’ll make it again. Lots of inspirations on your blog!
